This world-wide assortment has its origins in 1668, when the monk Pierre Pérignon served the first sparkling wine in history at the table of King Louis XIV. The aroma of champagne is influenced by the climate of that year, which puts its mark on the grape harvest Pinot Noir and Chardonnay. After the initial fermentation, the wine is poured into bottles next to a little sugar and ferment, and then sealed. Here is the magic. The fermentation absorbs the sugar, producing a second fermentation, which is responsible for the production of the bubbles. After consuming all the sugar, the yeast becomes inactive, but remains in the glass. During this time, champagne enters the aging process, which in the case of Dom Perignon lasts at least 7 years. The drink produced by Moet & Chandon has a strong character and a lovely aroma.
